The grape is received and inspected upon entering the winery. Subsequently, it undergoes a de-stemming and pressing process. The fermentation and maceration takes place in stainless steel vinificators for approximately 10 days, maintaining the temperature at 28ºC. Subsequently it is drained and pressed.
The next process is that of manolactic fermentation to subsequently subject it to 2-3 rackings prior to clarification.
Look: Clean and bright, with a medium depth garnet colour and violet rim.
Smell: Aroma of ripe pomegranate, gooseberries and blackberries, along with an interesting touch of herbs and shrubland.
Taste: Broad and smooth, with a red fruit finish. Balanced and persistent.
Pairing: Grilled or roasted meats, pastas and mildly cured cheeses. Perfect accompaniment for tapas and rice dishes.
