After arrival and inspection of the grapes in the winery, the crushing begins. Maceration and fermentation, at 28ºC for 15 days, will imbue the wine with the colour, complexity and nuance in line with the age of the vineyard from which the grape originates.
The ageing takes place in oak barrels, 50% American and 50% French, for 6 months.
Look: Clean and brilliant, deep ruby red in colour with hints of purple.
Smell: Strong and very fruity aroma, clearly invoking the grape variety, excellent barrel-aged aromas, with pleasant roasted notes.
Taste: On the palate it is full-bodied and smooth, appreciating ripe fruit (blackberries and cherries) with a pinch of vanilla, coconut, mint and bay.
Pairing: Red meats, casseroles, all types of game and strong flavoured cheeses.
